Olive Oil
Our oils are called:
IDEALE – harvested before they are fully ripe. The olives therefore contain very little oil. It is processed using a “slow” technique to achieve a product with maximum sensory and organoleptic properties. It is a “separate” process that we have dedicated precisely to the idealists who have worked, work, have inspired, and continue to inspire, and are inspired by this place. It is an essence of oil. We use it raw on everything.
IL RE DEI SASSI – is our diamond. The one that represents this mountain land.
It differs from Ideale only in that the olives are harvested a few days later and therefore begin to contain a little more oil. We use it raw on everything.
L’OLIO DELL’ABATE – The olives from which it is extracted are at the right level of ripeness. It is the foundation of healthy cuisine and eating. In our farm restaurant, everything is cooked with it. An oil with all the properties that knows how to balance flavors and aromas.
WE GROW ORGANIC, USING MANURE FROM OUR ANIMALS.
